Roshi isn't a perfect Jinchuriki so no Son Goku would not snap him out of it, plus the genjutsu is in itself sort infinite as long as the giant clam is in the area and alive, so Roshi would only get caught up in it again. Also Kisame's water release was shown very briefly(as in they showed a small part of the battle the first time around) to counteract his Lava release before his capture.
Gengetsu wins.

You need to have a good relationship with your bijuu to snap out of it and Roshi had one of the best since he's been host to Son for about 40 years and can transform fully (and paritally) not like how Naruto and Kurama were pre war. The giant clam produces a gas which is the genjutsu. It conceals the Clam and the user making it hard to get out of, but since Roshi can break out of it he doesn't get put back into it because he'll see the real position of the clam. If somehow he does get put back into the genjutsu and doesn't see the clam where it actually is he just needs to attack the spot for it to be destroyed and genjutsu over. Another easier way to get rid of the clam is transforming into Son and destroying the whole battlefield. The clam is stationary so its not hard.
There's no part in the short anime clip of Roshi and kisame fighting where Kisame uses a Water technique and it beats Roshi's lava style look at it again. Roshi just uses Lava Release: Scorching Stream Rock Technique and Kisame blocks it with Samehada even that you can't confirm because all you see is the rocks steaming - which isn't from water it's from the fact that they were on fire. Roshi and kisame are about to clash and it ends. No water release was used AGAINST Roshi.
The Steaming Danger Tyranny is part oil and I'd probably say that's an advantage to Roshi since it fuels the fire like when toads or toad users/summoners use oil but it depends on the situation since if Roshi use lava style while SDT is in his face then that might hurt. Similarly oil can be compared to the wind element, since wind also fuels fire just like how oil does, you can say that oil is weak to fire since wind is.
Episode 121. These debates seem to be about who pays attention to the manga and anime rather than taking what is known and debating them. As such rather than go into a long rant where I regurgitate what this wiki has already documented, I am done.

Roshi wasn't a perfect Jinchuriki and by the looks of things didn't even call Son by his name for like 40 years, which is the opposite of a good relationship.
Gengetsu wins as he specialises in Water Release, which is Roshi's weakness as he pointed out against Kisame.

Bee is the first Jinchuriki in known history to be friends with his biju. None of the other jinchuriki made peace, until they saw Naruto help Son Goku.
It was stated that the only people that could control the Bijuu was Madara, Hashirama, /possibly/ Yugura, and Bee. No one else was said to be able to control them except Obito who was thought to be Madara. This was during the Five Kage Summit.
Well I think you all are forgeting one thing, lava style is made from fire and earth, fire is weak against water but water is weak against earth. If Roshi has good earth techniques (which I don't know) then there is a chance he could win. One more thing - dont know how hot is Roshis lava, in real world there are erupting underwater volcanoes - lava can win against water, spread underwater as long as it's hot enough. So in batlle of water and lava either side can be victorious - it depends on the amounts of each and the temperature. Next thing - if you put oil on water and start to heat the oil from above/exterior without the direct heating of water - then the oil will start burning at some point - example when there were disasters of ships and the petroleum/oil leaked and spread on the surface of water it could begin to burn. Remember that mizukage's clone heated up from inside from the friction, so theoretically if you could heat the oil from outside clone body fast enough you could burn that oil and bye bye goes clone.
@Umishiru Ok so I was wrong about water beating lava it does at the beginning of EP 121 and even though it's only anime there's not a bunch of fights Roshi was to compare his strength with. But the thing about Roshi not being a perfect Jinchūriki, at the end of the day you think Son goku would want to die too if Second Mizukage traps him with his genjutsu? So wouldn't it be obvious that he would snap Roshi out of it. Kinda like when Naruto used to run low on chakra and kurama would lend him.(Before they became BFFs)
Roshi would win, and for various reasons.
a) Lava Release is made up of Fire and Earth Release. (Pretty sure most of you knew that already) While Gengetsu's Water could cool down Lava, the substance would still remain and could be ignited yet again, leading for surprise attacks and keeping Gengetsu on his toes throughout the battlefield.
b) Genjutsu won't work against Roshi, due to him being jinchūriki.
c) Gengetsu's water is made-up of oil. Oil heats up, fast. Using basic chemistry, it would be logical to say that Gengetsu's water would probably evaporate, and quite quickly, if it would come in contact with very high temperatures. Even if it would not evaporate, it would produce steam. Gengetsu's Steaming Danger Tyranny does not control steam (In contrary to what most people believe), but uses the principal of the water cycle to create high-pressurised explosions.
d) Gengetsu's main arsenal is composed of mid-to-long-range ninjutsu (Hozuki Clan Techniques), while Roshi, as evident by the Lava Release Chakra Mode, is adept at close-range martial arts. While yes, Gengetsu could keep his distance, his stamina is not great enough for him to produce lots of high-level jutsu quickly, as evident during his fight against Gaara, so the Mizukage would be at a disadvantage. (I am aware that the Second Mizukage was also shown to be somewhat good in Taijutsu, but I'd credit that to Edo Tensei)
e) Roshi in his Tailed Beast Form, assuming he could control it, would punch holes in Gengetsu's strategies and would easily be able to subdue his multiple explosions ninjutsu.
